| The invention relates to a method of producing chitin or chitosan by culturing specific fungi and isolating chitosan or chitin from the culture. This process produces natural, uniform and high quality fungal chitin or chitosan. The fermentation process would take 2~3 days. The current yield is around 1 L chitosan/20 L. The molecular weight of chitosan can be between 10~60 Delton. The uniformity is much higher than the traditional process. The characteristics of the produced chitosan is valuable in medical applications. |
